Poached chicken and fish are always delicious, especially when served with colourful vegetables. Eastern European cuisine uses beetroot, and roasting this vegetable will give you a fantastic accompaniment to your meal. You can always add some caraway or fennel seeds for extra flavour. If you are going to make a sauce, make sure that you use low-fat milk or even yoghurt, rather than double cream.
Salads boost your energy levels
After eating a heavy meal, you usually feel very full and not very energetic. If you try to eat salads and light meals you’ll soon see your energy levels rise and the lethargy associated with eating heavy meals become a thing of the past. Cucumber mixed with yoghurt and dill is popular in Scandinavia and across Greece, India and many parts of Europe. Make sure that you peel the cucumber and then place in salt to extract the bitterness. After half an hour, rinse the cucumber and then mix with the yoghurt.
Combine fruit with savoury meals
Fruit and meat can be a match made in heaven. Chicken goes very well with tarragon and grapes, apricots add extra flavor to any lamb dish, and of course pork and apple is popular. You can always replace the pork with pheasant, which is less fatty, and add some pears to the apples. Game can sometimes be a little dry, so the juices from the fruit will only enhance this dish.
