Once you have tasted this delicious homemade chocolate cake you will never buy a packet cake again or a supermarket cake for that matter.
Your guests will say “more please” but you’ll be thinking “oh, I wanted the rest for myself.”
- 125g butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon of vanilla essence
- 2/3 cup cocoa
- ½ hot water
- 2 teaspoons white vinegar
- 1 cup milk
- 1 ¾ cups plain flour
- 1 teaspoon baking powder
- 1 teaspoon bicarbonate of soda
Preheat oven to 170 degrees Celsius. Cream butter and sugar. Add eggs and vanilla and beat until light and fluffy. In a jug, mix together cocoa and hot water to a smooth paste. Gradually add this to creamed mixture. Sift flour, baking powder and bicarbonate of soda. Add white vinegar to milk. Gradually mix sifted ingredients and soured milk into creamed mixture. Stir until blended. Pour mixture into greased cake tin and bake for approximately 30 minutes. Test with skewer. If skewer comes out clean the cake is cooked. Cool for 10 minutes.
Mix ¾ cup icing sugar, 1 tablespoon cocoa, 1 tablespoon butter and a little warm milk until smooth. Add the milk only a little at a time so icing doesn’t become runny. For a peppermint taste, add a few drops of peppermint essence. It is also lovely to top the cake with strawberries. Scrumptious!
