These easy-shmeasy Banana Almond Cocoa Coconut Gooey Crunchy Delicious Oat-free Oil-free Raw Date Squares are the perfect food to grab either before or after a workout or a hike or just about any time you need an energy boost and a powerful pick-me-up between meals.
They’re simple to whip up in a food processor in five minutes and ready to eat immediately. They won’t last long once they’re sitting out on the counter, but if you’re able to ration, they’ll improve with a little rest in the fridge or an overnight, counter-top.
Here’s how for a small pan:
- 1 banana
- 1 cup fresh pitted dates (if dates aren’t fresh, soak for a few minutes in just enough water or orange juice to cover them)
- 1 1/2 cup organic almonds
- 1/2 cup cacao nibs
- 1 tsp pure vanilla extract
- sprinkle dried coconut
Blend almonds first in a dry food processor until they’re broken up but still crunchy chunks. Add the rest of the ingredients except coconut and blend just until they’re mixed well.
Sprinkle coconut on the bottom of a small square pan. Spread mixture into the pan and press down gently. Sprinkle coconut on top.
An hour or more of refrigeration will make it easier to cut and serve, but they’re at their gooey, tasty best at room temperature.
